The Taste of Fall

One of my favorite things about Fall (aside from the morning chill which requires a hot cup of coffee), is the yummy produce that accompanies the season.  Every Friday from June - November my town has a Farmer's Market.....this time of year I watch the summer produce start to dwindle, say goodbye to the zucchini and berries and Hello to the squashes, onions and apples.  This week was the perfect blend summer and fall produce....there was still some corn and cilantro to be found, but the acorn squash, eggplant and apples were appearing at all the tables. 
And what to do when you come home with such great produce?  
Make a salad of course!  Fresh Romain, green olives, heirloom tomatoes topped with fresh organic mozarella and basil and some crispy olive bread, all drizzled with some sweet balsamic vinegar and a few drops of olive oil.
Can you say "YUUMMMMMMM!"
I sure did!
