If you've been following my blog, you know that I have made a conscious effort to eat less processed foods. This includes white flour which has little nutritional value. My latest find, and baking love is Coconut Flour! The flour has a mild flavor and is very versatile. (I love almond flour as well, but my youngest daughter's nut allergy prevents me from using it all that much).
So...on to my latest recipe find. Chocolate Doughnuts! Yep, I came across this recipe and HAD to try it. Not only is it made with coconut flour, but it contains minimal sugar. As a matter of fact, it gets it's sweetness from Medjool Dates. Nice way to sneak that fruit in there! Another selling point is that they are baked in a Donut Pan,
not fried.
OK....so I can't take the credit for this recipe....I'm still learning the ins and outs of coconut flour (it's super absorbant). But, I can tell you that this recipe is a winner. The recipe comes from Multiply Delicious, and can be found HERE.
My four-year old was super excited and very happy to be able to enjoy a doughnut (most commercial doughnuts contain some form of soy, which she is also allergic to).
The only alteration I made was to add about a teaspoon of Agave syrup for a touch of added sweetness, and I used melted Enjoy Life chocolate chips for the topping (avoiding that soy again). To celebrate Fall, I finished them off with a few colored leaf-shaped sprinkles.
