Farmer's Market Dinner

Perhaps one of my favorite things about summer is our local Farmer's Market.  They set up in a parking lot every Friday.  The past Friday I took my youngest daughter and while she snacked on a fresh pickle, I picked up 2 bags of fresh goodness that would make up my family's dinner that night.

As soon as I got home, I popped a few of those olives in my mouth and went about whipping up some pesto.
Basil, Olive Oil, Pine Nuts and a touch of salt all in the blender....a few pulses later....
Green goodness!

I then washed the rest of the produce and put it aside for dinner.  Prep for dinner consisted of cutting the eggplant, zucchini, squash and peppers in slices, sprayed with olive oil and a smidgen of salt and pepper.    While that was grilling, I sliced the bread, spraying a bit of olive oil on it and broiled it....finishing it off with a quick garlic rub once browned.  I also sliced up a tomato and some fresh mozzarella as the corn on the cob boiled on the stove.

When everything was ready I stacked up the sandwiches, and added a thin layer of that pesto I made earlier.
It doesn't get better than this folks....yummmmmmmmmm!

I love summer.
