RECIPE: Whole Wheat (Freezer) Waffles

Are you a fan of freezer waffles?  I know my family practically survives on them during the week.  I typically purchase Whole Wheat Eggos...yes, I know...probably not the best option, but we are a working family, and breakfast is where convenience trumps nutrition (at least we choose whole wheat).  Anyway, given our lifestyle change, I had to find another option....so I took some time this weekend to make my own freezer waffles.
This recipe is a quick and easy waffle recipe that freezes real well....and the best part - it has no soy, and as a bonus....no artificial ingredients.   Get the recipe and freezer directions after the jump.


INGREDIENTS
2 large eggs
2 cups whole wheat flour (I use white whole wheat flour)
1 3/4 cups milk
1/4 cup melted butter
1/4 cup Canola oil (or melted Coconut oil)
1 tsp  Agave syrup (or sugar)
4 tsp. baking powder
1/4 t. salt
(optional)

NOTE:  If making these for the freezer, you will want to double the recipe.
Agave Sweetener from Trader Joe's; a great alternative to sugar!

DIRECTIONS
In a medium bowl, combine flour, baking powder and salt

In large bowl, beat eggs with wire wisk.  Beat in the the rest of the ingredients until smooth.
Pour onto hot waffle iron (follow your iron directions as to how much) 
Cook until desired darkness (if freezing, you may want to cook them a little less since they will be toasted again)

Set on a wire rack to cool. 

Try to keep family from devouring all the waffles.....

Once cool, place in a large Freezer Bag, and here is a great trick you can use for all of your freezer foods....take a straw and place it in the corner of the bag opening.  Close the bag around the straw.

Squeeze as much air out of the bag as you can, then suck the rest out through the straw.
Your waffles are now protected from freezer burn!
No need for one of those fancy, expensive sealers!  Pop these guys in the freezer and use them as needed....guilt free.
