Homemade Oreos: The Better Choice!

I have fond memories of those yummy chocolate sandwich cookies...you know the ones I'm talking about...the one who define your personality based on how you eat them?  The ones where you can't just stop at one.  Yum!  Well, "yum" until you get older and wiser about nutritional choices...and start reading labels.
Unfortunately these beloved cookies are just another combination of canola oil, high fructose corn syrup, soy lecithin.  Yup....and the high fructose corn syrup and canola oil pretty much guarantee that this cookie is made with GMO ingredients.  Boo hoo....
Have no fear though!  You can re-create this cookie in your own kitchen and feel darn good about giving it to your kids (in moderation of course...it still is a cookie!)

You can find a bunch of recipes all over the web.  I used this one.  I did make mine with all organic ingredients to avoid the GMO issue, but you of course do not have to.  I also used Spectrum Organic Vegetable Shortening, which is NOT hydrogenated like the more common Crisco.  You can find it in Walmart and Target.

 I have to  tell you these cookies are absolutely delicious!
As for storing them, I wrapped each sandwich in saran wrap (I made mine larger, so one cookie is a decent serving size).  I then put the bunch in a plastic bag and threw them in the freezer.

So, go ahead, indulge in some old-fashioned goodness without the guilt!  I promise they are totally worth the little extra time to bake!
