I love simple, I love quick....I love this recipe (if you want to call it that).
Not only is this a super easy, throw-together recipe, it is one that requires absolutely no measuring and easily adapts to your personal taste. Your really can't mess it up.....REALLY!
First, get your blender out....(you know that thing that sits up in your cupboard collecting dust)...
Throw in 1-2 cans of Cannellini Beans (2 cans for company, 1 can for yourself/family)
Throw in a handful of cilantro (or parsley if you prefer)
Add salt and pepper (a little to start, you can always add more later)
Add some olive oil (you don't need much - some recipes call for 1/3 cup - not needed...I only use 1-2 tablespoons)
ADD THE FOLLOWING A LITTLE AS A TIME UNTIL YOU FIND THE RIGHT BALANCE
Garlic (yup - I use the pre-chopped, easy squeeze - I told you I like easy!)
Cumin for a bit of smokey flavor (or any other spice that floats your boat..you don't even need to add anything bus salt & pepper)
Lemon juice (or lime juice)
Process using the pulse button (you don't want to overprocess). Taste and add flavors until you are happy.
Put in a bowl and refrigerate for a few hours to let the flavors combine.
Serve with crackers, veges, or whatever you have on hand.
This is a healthy, protein rich dip that goes over well during the summer months. No hot oven to deal with, finished in under 10 minutes, completely customizable and clean up is a cinch.
