Anyway, every summer Goggi would make this scrumptious blueberry treat from fresh blueberries. This thing didn't stand a chance - there were never leftovers. Never. It actually has some big, long German name, but I wouldn't even attempt to spell it (I even have a hard time pronouncing it), so I have re-named it Goggi's Easy Blueberry Tart.
Now...on to the recipe:
First go out and pick yourself some ripe, sweet blueberries
(or just pick up a pint at your local grocery store)
Gather your ingredients and melt the butter in your 10x12 baking dish
Whisk the egg, flour, sugar and milk adding the milk little by little until you achieve a pancake batter recipe (you may not use all the milk)
Pour the batter into the buttered baking dish
(there should only be a thin layer of batter on the bottom of the pan)Top with your washed blueberries
Bake and savor the smell of summer baking (be sure to leave your windows open so your neighbors can enjoy the smell too)
Set out to cool and top with cinnamon and sugar
Serve with some fresh blueberries and watch it disappear in the blink of an eye
1 pint fresh blueberries
3 tbls melted butter
1 cup flour
1 tbls sugar
1 egg
1 cup milk
cinnamon & sugar (to taste)
Bake at 350' for about 35 minutes or until the edges turn brown and curl up a bit.
Cool and top with cinnamon & sugar.
Top with vanilla ice cream if desired.
Enjoy!
Oh my! That looks so much better than the yogurt I just had for breakfast - and it sounds easy enough that I could even actually make it!!
